Sonia's Miso Glazed Fish – Recipe


8 pieces of your favorite 6oz fish like halibut, sea bass, salmon, steelhead trout, mahi mahi…..
1/4 cups sake
1/4 cup soy sauce
1/4 cup miso paste
2 tablespoons honey or 1/2 tablespoon brown splenda
4 minced garlic clove
1 tablespoon fresh minced ginger or powder
1/2 lemon juice
1/2 teaspoon pepper
1/2 cup chopped green onions or scallions for garnish

Season fish with all ingredients and marinate for 2 hours. Remove fish from marinade and place on oil baking dish. Preheat oven 400 degrees. Cook fish for 5 minutes. Change oven to broil and cook for another 4 minutes. Remove from oven and serve with brown rice, white or jasmine rice. Serves 8

FYI- Miso’s high sodium content makes it an ideal salt substitute in meals. The flavor enhancer is made by fermenting soybeans with a B12-synthesizing bacteria, making it a good source of the vitamin, and one tablespoon of miso provides two grams of protein and has just 25 calories. The zinc and copper found in miso support the immune system and energy production.
