1/2 cup whole wheat flour
1/4 cup beer, rum or whiskey
1/2 cup 2% milk
1/2 cup splenda brown sugar
2 ripe smashed bananas
1 egg white
1/2 cup of walnuts
1/2 cup pecan
1/2 cup gold raisin (or just brown)
2 teaspoon cinnamon
1 teaspoon vanilla
1 large box of sugar free instant pudding of your choice, I like chocolate.
2 tablespoon smart balance oil
1 teaspoon salt
Preheat oven 350 degrees. Mix all ingredients in a bowl and blend with a hand mixer until smooth. Spray round cake pan with baking PAM and pour mixture. Cook for 55 minutes or until done by testing with a thin knife. Let it cool and turn out onto a serving plate. Garnish with lite whipped cream or fruits of your choice.
*I just invented this yummy cake for the Holidays. I want cake without the guilt!
