Cindi's Minty Brownies

1 box Ghiradelli chocolate brownie mix (I use plain mix with chocolate sauce in the box)

1/4 cup chopped fresh mint

3 ounces good dark chocolate broken into little pieces

1 cup mini marshmallows

Make brownie mix as directed on box.

Immediately scatter chopped chocolate pieces on top of the cooked brownies and stick back into hot oven 1 more minute.  You want to soften the chocolate pieces so that you can spread the melted chocolate over the brownies.

add marshmallows over the melted chocolate and stick back into oven at 400 degrees on the broil mode and toast marshmallow until it begins to puff and turn golden brown.

Remove from oven and let cool completely.  Use a knife sprayed with non-stick cooking spray so that you can cut brownies without sticking in the marshmallow!

Coffee Flan – Fan de Cafe

8 oz. cream cheese
1 cup evaporated milk
2/3 cup expreso coffee
5 eggs
1/4 cup dark liquor or coffee liquor
1/2 teaspoon cinnamon
1/2 cup sugar

For the caramel
1 cup sugar
1/2 cup water

In small sauce pan make the caramel by mixing the two caramel ingredients. Cook over medium high until light brown stirring every 3 minutes. Pour caramel into a 9″ round cake pan. In a blender mix cheese, eggs and sugar. Then mix the rest of ingredients and pour into baking pan. Preheat oven 350 degrees. In a baking dish bigger than the cake pan pour 1/4 cup water and place the flan pan inside. Bake for 1 hour 15 minutes. Check if is done by using a knife, the flan is done if the knife is clean of mixture. Let it cool down and place in the refrigerator for 1 hour. Turn it upside down into a serving plate and refrigerate for 1 hour. Serve with whipping cream or ice cream on the side.

*My friends from Beverly Hills will invite me for Thanksgiving with the condition that I bring this flan.

Sonia's Moms Party Coconut Upside-Down Bread Pudding

1 1/2 cup french bread
1 15.5oz can coconut milk
1/2 cup butter
1/2 cup raisins
1 teaspoon vanilla
1 teaspoon cinnamon
3 beaten eggs
4 round pieces of can pineapple
5 cherries

Preheat oven 350d, Mix all ingredients but the pineapple and cherries. In a round buttered baking pan place the cherries and pinaples on the bottom then pour the mix on top. Cook for 1 hour or until brown on top. Turn and serve warm. COQUI!
