Open Face Mustard Tuna/Chicken Sandwich

1 can 12.5 albacore white tuna
1 can 12.5 chicken
1 cup chopped celery
1/4 onion cut into tiny pieces
2/3 yellow mustard
1/3 dijon mustard
4 minced garlic cloves
1/4 cup good honey
1 lemon juice
salt and pepper
2 tomatoes cut into 1/2 inches rounds
8 slices swiss cheese
cayenne pepper
loaf french bread

Drain tuna and chicken, then mix first 10 ingredients. Open bread and place mix on top. Top mix with tomatoes, cheese and cayenne pepper. Broil until done

The one in the left has lite cheese – on the right just as the recipe calls

FYI- Mustard seeds are high in antioxidants and are nutrient dense with selenium, which is known to have anti-inflammatory properties.

Tuna Melt

1 big can white tuna in water
1/2 cup chopped celery
1 roma tomato cut into small pieces
1/4 red onion into small pieces
2 tablespoon light mayo
1 tablespoon mustard
1 tablespoon ketchup
1 teaspoon lime juice
salt and pepper

4 pieces swiss cheese
your favorite bread enough for 4 sandwiches

Drain tuna. In a bowl mix all ingredients but swiss cheese and bread. Toast bread, fill with tuna mixture and top with swiss cheese. Broil until cheese is melted, about 2 minutes. Serve warm

Lite Cheese Steak Sandwich

For the steak:
1/2 lb thin cut filet sandwich steaks
1 large onion, sliced into rings
2 tsp extra virgin olive oil
1 tablespoon english sauce or Worcestershire
4 garlic cloves
3 sliced mushroom
salt and fresh cracked pepper to taste

For the sandwich:

8 slices of honey wheat bread
4 slices reduced-fat cheddar cheese slices
4 slices reduced-fat swiss

Cindi's Parisian Panini

Today I craved the flavors of Paris.  The streets of Paris are filled with delis foods in the windows lining the streets as you stroll.  I have never seen so many scrumptious Panini’s!  So hard to choose from so many fabulous choices.  But, I am home in southern California and must create my own!  Here is my version of Paris flavor.



1 French style Baguette (I use 6 inch)

2 tbsp dijon mustard

6 slices deli meat (I use 3 different Italian style deli meats)

3 slices crispy sweet apple (I LOVE HONEYCRISP!)

1 slice brie cheese

drizzle of good quality balsamic (I used pomegranate)


Slice open baguette

spead dijon evenly across both pieces of baguette

layer deli meat

add apple

add cheese

drizzle balsamic

Put panini into panini press until cheese is melty.


You will crave these flavors after one bite!
